Parmi les plus anciens outils emmanchés utilisés par l'homme, nous avons la hache et bien sur l'herminette, deux outils similaires qui pouvaient à l'origine utiliser la même pierre, leur différence étant l'orientation du tranchant qui est perpendiculaire au manche pour cette dernière, une autre différence le tranchant de l'herminette n'a habituellement qu'un biseau, situé coté manche.

Elle fut donc d’abord en pierre, emmanché dans un support coudé l'herminette est utilisée en coups verticaux d'arrière en avant, pour défricher, creuser, équarrir les troncs ou encore aplanir des surfaces.

Sa forme générale a peu évolué, des herminettes égyptiennes avec un taillant plat mais déjà en fer forgé font apparaitre une fixation métallique au manche, c'est une disposition: fer plat et étrier, que l'on trouve encore de nos jours.

L'herminette est un outil de sculpteur, menuisier, charpentier de marine ou en bâtiment, tonnelier, métiers du bois en général.

Toutefois on appelle également parfois herminette, des outils agraires de la famille des houes, et/ou des outils de taille de pierre comme l'ascia romaine.

Certains métiers feront évoluer l'outil dans sa forme et ses dimensions, le type d'emmanchement, l'adjonction d'une autre fonction : marteau, gouge, hache ...

Une multitude de modèles existent donc, même si depuis le Moyen-âge on peut considérer que les évolutions ont cessé.

Les appellations sont nombreuses en fonction comme d'habitude des régions, mais aussi des caractéristiques : asse, assette, asseau, asyau, aisceau, essette, tille, hucholot ...

Poignée de canne  

Les cannes traditionnelles des régisseurs de domaines viticoles et/ou oléicoles dans l'Aude et l’Hérault possèdent une poignée outil tout à fait similaire à l'herminette double droite et hache utilisée pour supprimer les rejets de la vigne et de l'olivier. Probablement pour pallier à quelques oublis des ouvriers.

Asse de vigneron  

Nommée asse de rabattage, mais aussi essette de cave ou débondoir, utilisée par le vigneron, le caviste, le marchand de vin pour poser la bonde avec le coté marteau, et la déposer en faisant levier, ou rabattre le dépassement de la bonde posée lorsque le tonneau doit voyager. 

Une autre fonction utiliser le coté de la tête du marteau comme chasse à frapper pour resserrer les cercles.

Çà ressemble à une herminette double, mais ce n'est pas un outil à percussion , les extrémités du fer ne sont pas droites mais légèrement retournées pour pouvoir gratter.

Gratte-fût pour ôter les dépôts de gravelle dans les foudres et cuves à vin.
